Coffee Cup Choc Cakes! Try this, so easy!!

Gooey Chocolate Cake Cups for Two {in 2 minutes!}
Yield: 2 cups of cake
Ingredients
1/4 c. all-purpose flour
1/4 c. sugar
1/4 c. cocoa powder
big pinch of salt
1/4 c. milk
1/4 c. butter, melted
2 large eggs, lightly beaten
1 tsp. vanilla extract
heaping 1/4 c. semi-sweet chocolate chips, plus a few more for sprinkling on top

In a small mixing bowl, stir together flour, sugar, cocoa powder, and salt. Add milk, butter, eggs, and vanilla. Stir well to incorporate. Fold in chocolate chips. Divide batter between 2 microwave-safe cups (my cup holds 6 fluid ounces) and then sprinkle the tops with a few more chocolate chips. Microwave both cups at the same time on high for 2 minutes. The cake will rise up above the cup rim, and then settle back down as it cools. Microwave strength varies, so adjust accordingly. The cakes should be cooked, but very moist, and a bit gooey in the middle. Allow cakes to cool for about 15 minutes prior to eating. Sprinkle with powdered sugar, if desired.

yum. i got into making microwave cup cakes at some point last year... i will look forward to making these next week!

i am remembering that i used to have a good recipe for microwave bran muffins at some point... hmm... i wonder if there might be something savory-muffin-like that would be healthy(ish at least) for lunches...

im sure there's a muffin recipe for microwave out there! This cake stuff...I will only make it once a month. We loved it. Normally,we never have dessert at home, so it was a treat!

Yes. Hopefully with bacon, bits of green stuff, and cheese.

Sigh. It always starts out being a treat with me... Then becomes something I binge on.

I find that I start to crave whatever is in my repertoire. If that makes sense.

I mean... If I eat veges and meat... Then I start to crave particular things within that sphere. Zuchinni! Or chicken! Or whatever. I think about other things (outside the sphere). But don't really crave them... Until I have them. Then they become part of the sphere again and I find myself thinking Chips! or Chocolate! Or whatever...

So... Things are hard.

I like it better when I think of Strawberries! as treats rather than... Sugar... Gluten... Processed / Additive based stuffs.

That being said... At the moment I'm drinking Beer!

Though later I'll get depressed about estrogen belly :-(

(not sure females need to worry about that)

and of course muffins are going to have flour (gluten) in them anyways... and they are going to taste a crap load better with at least a little butter...

my body is changing.

i mean... i think it tried when i hit 30. but i hit the gym at the same time and it ended up being... well... i was happier with it than i'd ever been before. but was never totally happy. even though i did everything right at the gym -- i never did completely dial in my nutrition.

but the happiest i'd ever been...

(and honestly posture was the final solution with respect to finding proper spinal length and alleviating anterior pelvic tilt / getting proper abdominal shortness / activation after so very many years of sitting)

but when i hit 35... in combination with my recovery from gym additiction (weightlifting rather than cardio)... well... i still got the booty (ATG squats ftw!!!)... but now i got the belly... and cellulite... and i've never (and i mean never) been happy about the way my upper arms carry fat (which i see IS genetic - other people in my family have that too - and now i'm noticing it in other women too, and realizing how often that part gets airbrushed / how some women simply don't carry fat there)...

sigh. sitting is going to be part of my life again. and i can't train as hard as i used to because... the way i used to train before... training was my focus in life. and it isn't anymore. the nutrition thing... is harder (for me). what kind of a middle ground i am going to carve with respect to cost / what i know is good for me / what is convenient.

but... microwave it is. ur... until i get me a slow cooker. i think that will be most useful. a frypan would be good, too, actually. for browning. i... always can go downstairs... dammit. maybe one day i will...
