I dont think you should come off Paroxetine cold turkey, I'm new to ssri's but as with all antidepressants it's not going to be easy, it's best to taper off slowly.
Olanzapine takes about a week for the full effects to kick in, It's an antipsychotic not an antidepressant so dont expect any effects Paxil gave you. I was only taking it for a few weeks and it made me feel terrible, all I could do all day was lie around and sleep. At the time I was also coming off Zispin (mirtazapine) cold turkey so I have an idea of how you will feel and it's no walk in the park.
