Well, first of all - their methods of action or different, Ritalin blocks NE/DA reuptake while caffeine antagonizes Adenosine receptors. The result is that Ritalin is a much more powerful stimulant, with considerable dopaminergic effects - whereas caffeine's effect on dopamine is relatively mild.
