Anyone like Thai food?

Ok, I've been cooking for over 20 years, and this dish I made tonight is in the top 3 of THE best Asian recipes I've ever made:

If you like Thai food, you will love this recipe--it's the best!

Follow the instructions, though--don't skip out on fresh lime, fresh cilantro, fresh chopped peanuts, fish sauce, chili sauce, or any of the other ingredients.

Except the 2 optional ones-don't use the pea pods or the ketchup (I cooked pea pods on the side because they really don't go well with Pad Thai).

For the peppers, I used 2 scotch bonnet peppers--but seeds from only one; next time I'd use the seeds from both.

And use fresh, pure coconut oil in the wok-it really made a difference in the balance of sweetness and added flavor. The other variation I used was 12 oz of rice noodles instead of the 8 or 10. Just make sure you follow instructions for soaking rice noodles-it made a difference as well.

It was so good, I just had to share... MMMMmmmmm....

Thanks. I love Thai food and this looks good. Fresh lime and cilantro might be a problem this time of year.

What kind of fish sauce do you use?

Ketchup? They've got to be kidding.

Interestingly...thai restaurants are the one place I haven't found something I like...I'm not big on peanuts or coconut in my "savory" dishes.

Hi Jane,

I know what you mean about fresh produce. Personally, I have to go to 3 different grocery stores to eat healthy at the lowest cost. So, when I'm too overtasked or not up for the 3 store weekly shopping trip, I relapse into non-healthy eating, then go at it again later.

Two major grocery stores here have monopolies on all the food in the city (unless I take an hour and a half r/t to shop in the city with stuff thawing on the way home and end up having to go to several stores anyway), and their produce is outrageous and not even high quality, although they have all the 'exotic' fruits and veggies. A small grocer opened up, but it's 40 mins. round trip--not bad unless you have to go to 3 different stores. They offer huge bunches of fresh, not wilted, cilantro there for $1.50. Limes 2 for $1. They have the best produce around, but the shelves are half full. I was just talking to the asst. manager yesterday (they are all so nice and I like to talk to them) who told me they can't stock the shelves because the only suppliers are part of the grocery store cartel. I assume you cannot get decent prices unless ordering in bulk. So, then I go to Aldis which has some good deals-frozen strawberries and other fruits, frozen tilapia, frozen wild salmon, etc. But their shelf foods and meats are bad, although you can get some good produce at times, with a small selection and some bad batches. So, I have to go to another store to get meats and other misc. things.

The ketchup was an optional suggestion for the American version. I have Squid fish sauce. Please don't tell me what it is. lol

You should try this recipe though. I've made Pad Thai a few times, and this one was the very best. Happy cooking!

Yeah, you'd have to like peanuts, coconut, and lime to like this dish. Coconut and lime are 2 of my favorite foods. I just love the style of eating in warm or warm and beachy areas. Mediterraneon, Carribean. I like to try recipes with pineapples and mangos alot too.
