I seem to be spending too much time on pbabble recently. I broke the "no computer in bed policy" yeterday while feeling like sh*t.

now I've spent so many hours online that my household is suffering.

I just somehow managed to clean up the kitchen. well, clear it up anyways.

my cat is asleep in the crook of my arm, keeping my elbow warm and toasty.

ergo, now I cannot move.

you might as well post to me, since I'm exiled to pbabble island. perpetual "sick days"

Thinking of you sweetie. I made it to Walmart today. Now I'm exhausted. One errand down only 4 more to go and no more engery.

aww, thanks MB, I guess you beat me as far as errands go. I'm suing Wal-mart (long story) and therefore boycotting them. But I digress. Those big stores (like BJ warehouse club) are exhausting! My dad uses the little scooters, because he can't walk very far. I look at that and am jealous. ((((scootercars))))

well, hoping by the time you read this you will have another errand under your belt.

Errrr, well I drove a scootercar! and I'm still tired. Did manage to make it to a nursery and buy two potted plants. And I swept 1/4 of the patio. That is IT!

IT sounds like quite enough. time to retire to the couch, huh?

my great accomplishment of the day was preparing a dinner omelette and turning it over in one piece. one large circle. everything else pales in comparison.

unfortunately, I have to do some work on my computer right now. like homework type stuff.

(or I could just go back to bed)

maybe I need some tiramisu, which I made, which has espresso in it.

hell. maybe I just need some espresso.

the other thing about inertia is that a body at rest will remain at rest (absent any external force) but a body in motion will also remain in motion (absent any external force)

now if only there weren't friction... sigh...

2 packages of (24?) lady fingers or sponge cake layers

soaked in

1/2 cup espresso
1/4 cup amaretto, cointreau, rum, etc
1tbsp sugar

1 pint heavy whipping cream whipped to medium stiff peaks with 1/2 c sugar. then add
12 oz whipped cream cheese, or even better mascarpone italian triple creme cheese

grate 2 oz of semisweet chocolate

now the construction. find a nice dish, I use a medium sized casserole dish or trifle dish. a cake pan will work too, but probably 9x13 will require a double recipe. so let's say 9x9 square (can you tell that I'm very improvisatory in my cooking?)

dip half the ladyfinger in espresso syrup, with your lady fingers and layer on the bottom of the dish then cover with half the creme and half the chocolate (you can use sifted cocoa powder if you wish). then repeat for the second layer. It may look messy, but that's okay, just use the grated chocolate to cover everything up.

refrigerate overnight or as long as you can hold out. yum. tastes good with some berries on the side, and let's face it, they add a little more nutritional value to the finished dessert.
