I don't know about coconut having maoi properties. I guess it could but I never heard of that. I've studied it a lot, primarily from a Lyme/infection point of view, in which it is useful as an antibiotic and antifungal. It has the potential to help someone feel better but also has the potential to make someone feel worse, via herxheimer reactions or other unknowns.
I personally see no danger in mixing it with parnate. Start with something small like a quareter teaspoon per day, and then as the weeks go by adjust from there.

Coconut was included as a food to use with caution because of one or more reports of a reaction. I don't think any cause-and-effect has been demonstrated for a pressor reaction. Many of the MAOI dietary precautions have been based upon as few as one report.
